Cauliflower Saute

Cauliflower Saute

Ingredients:

2      - cups fresh cauliflower flowerets
1/2   - cup sliced onion
1      - clove garlic, minced
1      - tablespoon olive oil
1      - cup fresh or frozen snow pea pods
1      - sweet red pepper, cut into strips
1/2   - cup sliced fresh mushrooms
1      - teaspoon dried oregano
1/4   - teaspoon salt


Procedure:

Step 1
- Arrange cauliflower in a steamer basket; place over boiling water. Cover and steam for 8 minutes; drain and set aside.

Step 2
- Cook onion and garlic in olive oil in a large nonstick skillet over medium heat, stirring constantly, until tender. Add cauliflower, snow peas, and remaining ingredients; cook, stirring constantly, until heated.

Yield: 4 (1-cup) servings
