Masala Vegetable Medley

Masala Vegetable Medley

This dish's name comes from the Indian spice blend garam masala, made from spices, including black pepper, cinnamon, cloves, coriander, cumin, mace, nutmeg, and dried chiles.


Ingredients:

1        - bunch broccoli, cut into flowerets
1        - small yellow squash, sliced
1        - zucchini, sliced
1        - sweet red pepper, sliced
1        - large onion, sliced
2        - tablespoons basil-flavored olive oil or olive oil
2        - tablespoons lemon juice
2        - teaspoons garam masala seasoning *
1/2     - teaspoon salt
1/4     - pound fresh snow pea pods, trimmed (about 1 cup)


Procedure:

Step 1
- Cook first 5 ingredients in oil in a Dutch oven over medium-high heat 2 minutes, stirring often.

Step 2
- Stir in lemon juice and remaining ingredients, Cover, reduce heat, and cook 5 to 8 minutes or until vegetables are tender.

Yield: 12 servings

* 2 teaspoons curry powder may be substituted.
