Special Apricot Pies

Special Apricot Pies

Ingredients:

1        - (6-ounce) package apricot halves 
3/4     - cups water
1/2     - teaspoon ground nutmeg
1/2     - teaspoon vanilla extract
1/2     - cup butter or margarine softened
4        - ounces cream cheese, softened
1 1/2  - cups all-purpose flour
1/2     - teaspoon sugar
          - Glaze


Procedure:

Step 1
- Position knife blade in processor bowl; add apricots. Process until finely chopped.

Step 2
- Combine apricots and 3 next ingredients in a small saucepan; cook over medium heat, stirring constantly, 5 minutes. Set aside.

Step 3
- Beat butter and cream cheese at medium speed with an electric mixer until creamy. Add flour and salt, beating mixture at low speed until dough forms a ball.

Step 4
- Roll dough to 1/8-inch thickness on a lightly floured surface. Cut into 2 1/2 inch circles.

Step 5
- Place about 1 teaspoon apricot mixture on half of each circle. Moisten edges with water; fold dough over apricot mixture, pressing edges to seal. Crimp edges with a fork, and prick top of each pie; place on ungreased baking sheets. Bake pies at 350 degrees for 18 minutes or until lightly browned. Remove to wire racks; brush with Glaze.

Yield: 3 dozens


Glaze

Ingredients:

1        - cup sifted powdered sugar
1 1/2  - tablespoons milk
1/2     - teaspoon vanilla extract
1/4     - teaspoon butter-flavored extract


Procedure:

Step 1
- Combine all ingredients in a small bowl.

Yield: 1/3 cup

  1. Apricots = happy childhood memories. We had an apricot tree in our yard that we loved to eat from when the fruit was ripe. If there was any left on the tree by the time harvest came I would help my mom can it for use in such baked goodness as this.
