Spice Layer Cake with Coffee Frosting

Spice Layer Cake with Coffee Frosting
Ingredients:

1       - (18.5-ounce) 97% fat-free yellow cake mix
3       - egg whites
1 3/4 - cups water
1       - cup fat-free mayonnaise
1       - teaspoon ground cinnamon
1/2    - teaspoon ground allspice
1/2    - teaspoon ground ginger
1/8    - teaspoon ground nutmeg
         - Vegetable cooking spray
         - Coffee Frosting


Procedure:

Step 1
- Combine first 4 ingredients in a large mixing bowl; beat at low speed with an electric mixer until blended. Add cinnamon and next 3 ingredients, and beat at high speed 2 minutes. Pour batter into 2 (9-inch) round cakepans coated with cooking spray.

Step 2
- Bake at 350 degrees for 25 to 35 minutes. COol pans on wire rack 10 minutes. Remove from pans, and cool completely on wire racks.

Step 3 
- Spread Coffee Frosting between layers and on top and sides of cake.

Yield: 14 servings.

Coffee Frosting:

Ingredients:

1 1/2 - cups firmly packed brown sugar
1/2    - cup water
1/8    - teaspoon instant cofee granules
3       - egg whites
         - Pinch of salt

Procedure:

Step 1
- Combine first 3 ingredients in a heavy 2 quart saucepan/ Cook over medium heat until mixture begins to boil and sugar dissolves, stirring often. Cook until mixture reaches soft ball stage or candy thermometer reaches 240 degree, stirring often. Remove mixture from heat, and add coffee granules, stiring until granules dissolve.

Step 2
- Beat egg whites at medium speed with an electric mixer until foamy. Continue to beat, slowly adding syrup mixture in a thin stream.

Step 3
- Add salt, and beat in high speed until stiff peaks form and frosting is thick.

Yield: 4 cup
