Fajita Fettuccine

Fajita Fettuccine


Ingredients:

1       - tablespoon fajita seasoning
1 1/2 - pounds skinned and boned chicken breast halves
         - vegetable cooking spray
1       - large onion, cut into thin strips (2 cups)
1/2    - large sweet red pepper, cut into thin strips
1/2    - large green pepper, cut into thin strips
1       - recipe Alfredo Sauce (see recipe)
1       - (12-ounce) package fettuccine, cooked without salt or fat
2       - tablespoons chopped fresh cilantro


Procedure:

Step 1
- Sprinkle fajita seasoning on chicken breasts

Step 2
- Coat a large nonstick skillet with cooking spray, place over medium heat until hot. Add chicken, and cook 3 to 5 minutes on each side or until done. Remove chicken from skillet, and let cool. Cut into thin strips.

Step 3
- Add onion and pepper strips to skillet, cook over medium heat, stirring mixture constantly, until vegetables are crisp-tender.

Step 4
- Stir in Alfredo Sauce, add chicken and fettuccine, and toss gently. Sprinkle with cilantro, and serve immediately.

Yield: 6 servings
