Grilled Italian Pesto Sandwich

Ingredients:

1       - (6-ounce) package sliced mozzarella cheese, cut into thirds
8       - (1-inch-thick) slices Italian bread
1/4    - cup commercial pizza sauce
1/4    - cup commercial pesto sauce
20     - slices pepperoni
2       - tablespoons butter or margarine, softened


Procedure:


Step 1
- Arrange 1 cheese slice on each of 4 bread slices, spread evenly with pizza sauce. Top each with a cheese slice, and spread evenly with pesto sauce. Arrange pepperoni on top, cover with remaining cheese slices, and top with remaining bread slices.

Step 2
- Spread half of butter on outside of 1 side of each sandwich. Invert sandwiches onto a hot nonstick skillet or griddle.

Step 3
- Cook over medium heat until browned

Step 4
- Spread remaining butter on ungrilled side, turn and cook until browned

Yield: 4 servings
