Mediterranean Sauce

Mediterranean Sauce


1/2     - cup chopped onion
1/2     - cup chopped green pepper
1        - clove garlic, minced
          - Vegetable cooking spray
1        - large tomato, chopped
1/2     - cup Chablis or other dry white wine
4        - ripe olives, chopped
1/8     - teaspoon hot sauce
1/4     - cup (2-ounces) crumbled feta cheese


Step 1
- Cook onion, green pepper, and garlic in a nonstick skillet coated with cooking spray over medium heat, stirring constantly, until tender. Add tomato and next 3 ingredients, cook 5 minutes or until thickened. Sprinkle with feta cheese, and serve over chicken or fish.
