Asparagus Salad |
Ingredients:
1 - pound fresh asparagus spears
1/4 - lemon juice
2 - tablespoons honey
1 - tablespoon vegetable oil
8 - lettuce leaves
Procedure:
Step 1
- Snap off tough ends of asparagus. Remove scales from stalks, if desired. Arrange asparagus in a steamer basket; place over boiling water. Cover and steam for 8 minutes or until crisp-tender.
Step 2
- Plunge asparagus into ice water to stop the cooking process; drain and chill.
Step 3
- Combine lemon juice, honey, and oil in a jar; cover tightly, and shake vigorously. Chill.
Step 4
- Arrange lettuce leaves on individual plates; top with asparagus, and drizzle with dressing.
Yield: 4 servings

I love asparagus and this salad sounds lovely and fresh and light. I haven't tried honey dressing with asparagus before but more than willing to give it a whirl!
