Spinach Rice Salad

Spinach Rice Salad


Ingredients:

1       - cup long-grain rice, uncooked
1/2    - cup Italian salad dressing
1       - tablespoon soy sauce
1/2    - teaspoon sugar
2       - cups shredded fresh spinach
1/2    - cup sliced celery
1/2    - cup sliced green onions
6       - slices bacon, cooked and crumbled


Procedure:

Step 1
- Cook rice according to package directions, rinse and drain. Set aside

Step 2
- Combine salad dressing, soy sauce, and sugar in a large bowl. Stir in rice. Cover and chill 2 hours

Step 3
- Stir spinach and remaining ingredients into rice mixture. Serve immediately.

Yield: 6 to 8 servings.

  2. It's a beautiful looking dish. It almost looks like there are chopped tomatoes in there, but not in the recipe. That would be an addition I'd enjoy. Winston Salem, greets Clemmons!
