Ham-and-Grits Crustless Quiche

Ingredients:


1/2    - cup water
1/4    - teasponn salt
1/3    - cup quick-cooking yellow grits, uncooked
1       - (12-ounce) can evaporated milk
1 1/2 - cups chopped, cook ham
1       - cup (4-ounces) shredded sharp Cheddar cheese
3       - large eggs, lightly beaten
1       - tablespoon chopped fresh parsley
1       - teaspoon dry mustard
1 to 2- teaspoon hot sauce
Garnish: fresh parsley sprig


Procedure:

Step 1
- Bring water and salt to a boil in a large saucepan; stir in grits. Remove from heat; cover and let stand 5 minutes (mixture will be thick)

Step 2
- Stir in milk and next 6 ingredients. Pour into a light greased 9 1/2-inch deep- dish pieplate.

Step 3
- Bake at 350 degrees for 30 minutes. Let stand 10 minutes before serving.

Step 4
- Cut into wedges.

Yield: 6 servings.

  1. I like your use of evaporated milk for that special richness it imparts (and zero crust too!)
